in addition to the other suggestions there are indeed the debugs on
the ASA itself you could check:

ciscoasa# debug dhcp?

  dhcpc    dhcpd    dhcprelay
ciscoasa# debug dhcp

"dhcprelay"/"dhcpd" should give some options to experiment with.

Of course you also should be able to use capture.
