I think the best thing to start with is the Cisco IP Telephony Solution Reference Network Design (SRND) for Cisco CallManager 4.0
Read through it and you should get the basics.
Installing CallManager is pretty simple from what I remember. Very little options other than plugging in a few parameters.

"walks you thru" a working CM installation from start to finish? I
don't care how basic, it can be 3 phones and a basic dialplan, just
something thats pretty complete or close to complete.
