It's normally in the switch Configuration Guide. For example,
for the 2950s, the CG says in the Configuring VLANs section:

 "Catalyst 2950 switches that run the standard software image
 (SI) support 64 VLANs; Catalyst 2950 and Catalyst 2955 switches
 that run the enhanced software image (EI) 250 VLANs."

However, you should be very careful about your topology if you
create that many VLANs, because the switch only supports 64 STP
instances. (So, if you create 164 VLANs, the switch will not be
running STP for 100 of those VLANs...)
