To summarize what others have said....

Use "ip helper-address" to forward the DHCP broadcasts to your Linux (or
other) DHCP server.    Assuming your DHCP server can assign addresses based
on MAC address (most can),  you are set on that req't.  As for the
"walled-garden", it will depend on your DHCP server implementation as to
how it handles address requests from various GIADDR addresses.  You may
have to allocate a range of addresses per subnet or you may be able to
assign addresses out of a central pool for all the remote locations.
