You can specify it. It's called "Output Interface" instead of source and
it's available under standard, not just extended, options. Here is an example:
Router#sh ipv6 int bri
Ethernet0/0 [up/up]
FE80::A8BB:CCFF:FE00:100

FE80::A8BB:CCFF:FE00:101
Router#ping ipv6
