i know that the cisco wireless solution can do this - the access points
talk back to a central controller and you can operate in whats known as H-REAP mode
under which the LANs that the AP serves out drop out to the local switch
the AP is fed by (trunk link yada yada) and if the main link goes
down then the AP uses a cache of all current sessions - so that they can continue..
its only new sessions that cannot be authenticated.
