It's not exactly cheap, but the N5K-C5010P-DEMOBDL ($20k list) would be a good place to start if you want familiarity with most of the functionality sans layer 3.  It's designed for NFR and would let you practice some of the storage features that are coming to the n7k, like FCoE, FCF, and NPV.
