Have you read the RFCs?

I.e., read this first (if you haven't already) https://tools.ietf.org/html/rfc7209 and then this https://tools.ietf.org/html/rfc7432 (assuming you want to use MPLS instead of VXLAN).

They're always my go-to place to understand a new (to me) technology. Then read papers and books by vendors and operators after, to get an idea of how to implement the technology.
