Hi Scott!

You could use the fax onramp/offramp application in your Cisco Box (if 
available) and receive/send the fax directly at the gateway. Incoming 
emails will be sent to the users via email. Outgoing fax are also 
possible sending the Fax with SMTP to the Gateway.

I've did this for incoming (onramp) faxes in this project:

There would fine configuration files and a perl script to reformat the 
Emails sent by Cisco Boxes.
