I think what you'll need to do is the following:
Perform a DIRT backup on the current Unity server
Uninstall Unity from the server (Using the uninstall tool)
Add the Unity server to the new AD domain.
Create your Unity service accounts in the new domain
Reinstall the same version of Unity
Reinstall the same version of the DIRT restore tool
Restore the backup taken in the first step.
If an AD object exists with the same alias as the backed up subscriber account, DIRT will restore the Unity attributes, greetings etc to the existing account. If DIRT can't find an AD account with a matching alias, it will create a new one.
Hopefully someone will fill in any gaps or correct any errors in my thought process.
