I have seen this on some networks. Try to clean up the network as best as you can and reduce un-needed traffic to phones.
Also, with these model phones having the switchports going to phones configured as access mode with voice vlan works better then switchport configured as a trunk going to a phone from my run ins with this problem. There was a recent thread heavilly discussing the switchport config for phone connections.

I was wondering about a specific problem I saw.
Voice quality deteriorates in 7912, 7902 and 7905 IP phones whenever
there is heavy traffic on the switch.
This was noted on a TAC Case:

Since the 7911 has more memory and features, is it the answer to this
issue?
