David,
If they are cisco phones, you probably don't need that. Encaps of dot1q is pretty standard for a trunk port, but typically you configure switchport host and switchport voice vlan for Cisco phones.

Subject: [cisco-voip] Added config lines to 3560POE
I had an "expert" come in last week and fix some minor issues on our network.
He added this line to the ports on my 3560POEs. These ports support a phone and PC:
switchport trunk encapsulation dot1q
Any idea why he would have added that line? What does it do? Any harm?
On another switch, he added that line and
switchport mode dynamic desirable
to the ports. Again, these ports (most of them are actually unused, it's a small network) will only have a phone, or at best,
a phone with a PC hanging off them.
What do you think?
