I don't know about "store and forward" but I know that Unity has the concept of Internet subscribers which allow you to leave voicemail for a user and have that sent to an email address. We didn't test it out, but theoretically, that's what it's there for.
Alternatively, Unity uses Exchange, so I'm sure you could set up the Exchange account with a forwarding address for a regular subscriber.

Subject: [cisco-voip] Unity - Voicemail
Is it possible to send Unity voicemail to another email account such as a gmail account?
Thanks,
