Sniffing syslog?
No problem..
Just build a filter based on the output TCP Port of syslog..
Port 514 UDP...


Shouldn't be too hard..

You can set up a remote syslog, look in System->Enterprise Parameters to set the destination and level.

AFAIK yes you can sniff syslog events.
