You can check out the help file for the uninstall tool:

It'll give you a list of everything that the tool would have removed
from AD, so that you can manually track them down and remove them. The
next time Unity syncs to AD, those items should then be removed from
SQL on any servers that are still running, and you'll no longer see
the old server in GSM.
