Correct, the Windows-based CUCM versions only support SIP trunks and  
not SIP clients.  There are no SCCP clients for the Mac.

I've heard of people trying CIPC in vmware on a mac but with mixed  
results.

You would need CUCM 5.X or later and could use CUPC for OS X.
