In the CUCM SRND, there is a Security section that does a basic walk
through on how Cisco recommends securing your CUCM. That might help.

Subject: [cisco-voip] Securing Unified Communication

Dear group;

Our customer has a concern about securing voice network and want to
secure the voice traffic as much as possible...I have read somehow in
the topic and found a training course "IUCS" but unfortunately I cannot
find any center that runs this course as always the dates are not fully
booked so they cancel the date.

Now I am going to deploy it in a lab environment and study for it before
doing it in life network; however I cannot find any books on Cisco press
or other vendors that focus on this topic...I only found some
information here and there...I want to have a detailed reference guide
for this topic starting from L2 L3, application, endpoint, voice traffic
"sig and RTP" security.

Any ideas?

  Best Regards;
