And regardless of what you are using under "System - Server" the UCM Publisher still has a hostname assigned to it. If you can't remember it, you will use the CLI to retrieve it. Also, make sure you add the CUP server as an Application server in CUCM too.

You cannot. You must put in the hostname of UCM in the hostname field.
The IP address goes under it.
