I had tried to use the voice-port command but was struggling with it as it did not seem to like it.
Had another go and got it to work and now it's nice and clear.

Willd guess. Try configuring
voice-port 0/0/0
compand-type a-law
on your voice-ports. If they default to u-law you will get noice and crackling in europe where we have a-law.
