It's not possible to use another tool, with no root access you can't install anything nor could you possibly access everything that needs backing up.
The only thing you could do now with VMWare UC is backup the VMs themselves using a tool that can do that. Of course that is only supported if done when the servers are offline: http://docwiki.cisco.com/wiki/Unified_Communications_VMware_Requirements#Copy_Virtual_Machine

Hello,
Is there anyone that is using a dedicated Backup Client to back up their VOIP Servers (Call Manager, IPCC, Unity) rather than using the built in backup (Disaster Recovery) function? We use the EMC Avamar Data De-duplication system to back up all Servers / VMWARE VMDK, etc. Wanted to know about installing the Avamar client on the VOIP servers.
