Tested it by inserting a rogue IP for the first voicemail server and also the first ldap server. It doesn't even try the 2nd server configured. Then I found this page (guess I should have searched a little harder). It doesn't even mention an option for entering a redundant voicemail server or ldap server. I think I will probably resolve the redundancy for voicemail/LDAP by using our load balancers we have.

Not a CUCILync expert but I believe you are fine with voicemail, but from a quick test the client only uses the first ldap server. I'd highly recommend you confirm both of these for yourself before any mass update.

We have CUCILYNC up and running but it is currently only configured with the primary voicemail server as follows:
SET VVM_SystemServer_0="voicemail"
SET VVM_Mailstore_Server_0="voicemail"
Can I add a redundant voicemail server by adding a second line as follows?
SET VVM_SystemServer_1="voicemail2"
SET VVM_Mailstore_Server_1="voicemail2"
Also, what about LDAP?
We currently have the following:
SET LDAP_Server_1="ldap://1.1.1.1:389"
Can I just add?
SET LDAP_Server_2="ldap://1.2.2.2:389"
