Unlike with CUCM, Unity Connection won't delete accounts that don't match with LDAP, it's happy to have a mix of LDAP and non-LDAP accounts. Instead, when you look under a given user account you should see under "LDAP Integration Status" that "Do Not Integrate with LDAP Directory" is selected. If you then later have that account in LDAP again you can manually select "Integrate with LDAP Directory" again to have it sync that account.
