if you have MRA, just have to update the domain on the core under
Configuration > Domains.  For IM&P, as Ryan stated, just update the
presence domain.  Here is a good video howto put out by the Cisco PDI team:

I recently did all of this for a customer, other than the slowness of the
services starting/stopping, it's painless.  If you are in HA, heed the
warning that you need to turn that off before stopping services.  I forgot
about it when I did, and stopped HA after services were down.  It still let
me change the domain, but couldn't get users to login without bouncing IM&P
pub.
