Luis, there is a command-line switch you can use to install connections on a regular win2k3 server instead of using a platform configuration disc. I believe it is /nopcd but its been a few months since I had to do it.

I need to install Unity Connection on an existing Windows server 2003,
I will used it for training. I have the license from Cisco. But when I
try to run the installation it wants me to install 2003 from the DVD
that came with Unity Connection. Is there a way to bypass it and use
the version of 2003 that is already install.

Thanks
