Variac

Personally, I would put the variac first varying the 0-120 AC into the
Isolation transformer and fuse both sides, Isolated and non-isoloated,
as for mounting the variac put some "fish paper" on the front of the
unit and then use a nylon or phenolic sleeve (short and sweet) to help
isolate the treaded area from the chassis.
you can make a graduated scale for the variac or buy one from newark
about a buck or so, but a AC current meter would be a must on the secondary side. and of course a
nice pilot lamp.  A little Hammertone Paint!!! and
you have a nice piece of bench equipment.
current meter can be gotten from Fair Radio, Surplus Sales, Hanger 18  etc.
