Sounds like you may have a problem with parasitic oscillation.  Maybe something in the neutralization circuit is changing value. It warrents a check.

Hi!  I have a Viking Ranger that I obtained from another ham on the
promise that I would fix it for him... Thinking I'd be able to do
that in a blink of an eye, I lugged it 200 miles home and put it on
the bench.  It initially keys beautifully (typical of the old Rangers)
but then, after a short while, the vfo goes crazy, dancing a jig all
around the frequency.  I haven't been able to find the problem
component.

Has anyone had that sort of problem with a Viking Ranger in the past?
If you have, I'd be delighted to hear what your cure was.  If you haven't,
but believe you might know the problem.  Please e-mail me your corrective
action.
