I don't have mine in front of me,
but I beleive they are a "clutch" style knob.
There is a clutch inside the knob that squeezes onto the shaft.
The squeeze is accomplished by pulling the clutch into a conical
or tapered housing. The knob has a screw in the centre to do this.
Usually, just loosening the centre screw, releases the clutch,
and the knob is free.
Sometimes the clutch may stick in the housing, or bind to the shaft.
Pushing the centre in (or with a gentle tap) should free it.
Perhaps wiggling the knob, or lubricating the inside mechanism may asist.
Be gentle with it.
