It seems odd that you are concerned about the GigE portion but didn't
mention the (much slower) DSL portion.  That's where I'd be concerned
about stuff getting hammered (bittorrent is *not* your friend).  Even
with an NPE-G1, you're not going to be getting anywhere near wire
speed on the gige side if you're using it as a NAS/LNS...  and on a
link that's running at 20%, QoS is sort of a wasted gesture.  Of
course, if you start looking at the DSL side you're going to need to
have your customers put in some kind of CPE that is capable of doing
custom queueing on their end...
