They're identical, except for the stacking capabilities.

Since they form a single logical switch when stacked, it's
possible to build much cleaner L2 setups with the 3750s than
with cascaded 3560s. 

Of cause, it there's only going to be a single unit in each
wiring closet, you don't get anything from stacking.
