Is 0/0 really all you're sending from the 7507? If so, either send
specifics or drop your static default on the 1811 and add a /32 for
the 7507 endpoint. (or my preferred knee-jerk answer which is stick
the tunnel endpoint on the 1811 into a VRF..)

Otherwise what's 'sh ip eigrp topo' look like?
