One data point for you...

You are correct that RSPAN will work over L2TPv3 - but in the case of 
the 6500 it requires a separate device to handle the L2TPv3 traffic. In 
our case, we had a pair of 6500s connected via a dot1q trunk pushed over 
a L2TPv3 pseudowire. The L2TPv3 pseudowire was terminated by 7200s, so 
from the standpoint of the 6500s they were directly connected to each 
other at layer 2. We just brought up an RSPAN VLAN across the trunk and 
used that to push SPAN traffic to our sniffer host at the other end.

So as usual, "buy more hardware" is one way to get what you want...
