Just have the server not use port 2 unless switch 1 fails.  With Linux or
FreeBSD, this is pretty straightforward ("bond" or "lagg" drivers), with
Windows, I'm not sure whether you can do this out of the box or whether
you still need specialized ethernet NIC drivers that will only work with
those vendors' NICs.

STP won't help unless the server actually runs a *bridge* between his
two ports, and you most certainly don't want *that*.
