PS you *may* not want to "capture as much information as possible". I would imagine if you syslogged a 'debug all' that neither your syslog source nor destination would be too happy.

So what exactly is your question? If you just want to enable Syslog logging, why not googling for "syslog cisco" first? The first result already tells you how to configure it on most Cisco devices:
