Probably in some boot-related NVRAM. A "show boot" does not tell, so
"show sdm prefer" and "show system mtu" are needed AFAIK.

SNMPv3 users, "show snmp user". These are stored in private-config.text,
which cannot be read for security reasons of some kind.
The VLAN database if you're not using "transparent" or "off" VTP modes.
It's stored in vlan.dat. Make sure to delete this before applying
configuration to the replacement, since VLANs from an existing vlan.dat
are inherited even with "vtp mode transparent".
I don't know anything about ME3400, but the above is relevant for at
least the 3550, 3560 and 3750 switches.
