The default is just one table because it's simple and works in the
majority of cases. But as with any software it's configurable for
a reason. :-)

Sounds like it needs to either have three instances of the sql
module configured for each thing to be logged, or just call custom
SQL statements using unlang to insert or update records in the
different tables as required.
