Andre,
Let me rephrase. The normal information you would expect in CDR (to
identify conferenced and transferred calls) do not currently exist with CME.

I'm afraid that we don't own the Cisco kit, so we don't have a "Cisco
account team" as such. However, I would have thought that the local vendor
for South Africa (DiData) would be able to get this info, but the person I
have spoken to there, claims that it does not exist / he is not aware of it
(take your pick).
We are in the process of applying for partner status, but that will take
time, and I would like to finish this job before that - the CCME and our
software are both installed and running at the client already, and they are
just waiting for me to join them together in the middle with the right
software!!
Do you know: does such a document exist, describing the syslog CDR output,
or not?
If it does, would you know of a document ID or URL for it, either publically
accessible, or available via the national appointed vendor?

Sounds like a bit of a known issue with CME and CDR:
"as of now this is a limitation of CME and CDR/billing records. When using
skinny (sccp), non-standard based call transfer or forwarding...this
information is not recorded in the CDR. This is a recognized flaw and is
going to be an added feature in an upcoming release of CME code, so it will
record more than two call legs...and will record transfers, forwards and
diversions. This release is due out in 06, but I'm not exactly sure
when..."
Please contact your Cisco account team and inform them of the criticality of
this feature for your deployment.

I have been looking into this same thing, and I was actually hoping someone
else would have a definate answer but I believe Radius is another way.
The CME administration guide makes referrence to a RADIUS billing server :

Thanks for your response. I am aware of the StoneVoice product.
However, I see that I did not express myself clearly enough in my initial
post - my company is a _vendor_ / _developer_ of a call billing application,
and we would like to extend the range of switches that we can collect from,
for call billing purposes.
Hence, my initial request: "Could any kind soul out there point me to a
source of some detailed info for [CDR records in] the CCME environment, or
at least state authoritatively that there ain't no such thing."

www.stonevoice.com does what you are wanting to do. I belive they use
the syslog method of collecting the data. Here is their CME product

I have heard that Stonevoice has a very good product but have not used it.
Another one I found from a google search is

syslog method as well. CCME is being widely adopted by many companies. I
know of one in my state that is going to be replacing 450 key systems with
CCME systems. That is a huge deployment. I would say that your company
will probably want to work up a solution for this. I think it is definitely
a good move.
