With GbE now a commodity technology I can't imagine running anything other than high quality CAT-6e cable, unless cost is major concern. If you look carefully you can even find cable that will probably work with 10 GbE over copper. Most of the new Cisco phones run GbE. There is a significant difference in cable and jacks that meet cat5e vs cat6 when it comes to specifications. If cost is a concern I'd suggest running cat6 cable and get cat5e jacks as you can upgrade those latter with relative ease.
