There's a perfectly good one floating about on the Cisco website in the documentation
section for the 3500-XL IOS.

In a nutshell:

* no, I don't think they do Auto-QoS, but
* all the basics are in the documentation, and
* they don't do "voice" vlan negotiation like later switches; its set statically.

If all you're doing is voice then the configuration shouldn't be that hard.
It might get a bit less fun if you're doing anything terribly complicated.
