This sounds like the same problem I had. After unchecking extension mobility I could no longer save the user field. We had to upgrade to CUCM 5.1(2) to resolve this.
Here is what Cisco said...
John,
I was able to recreate your issue on CM 5.1(1)-3122-1 which this EM bug should be fixed on. The current workaround to removing EM from the phone is to delete the phone. If you want you can continue doing this and I can try to do some research on this. Also I checked CallManager 5.1(2) and the issue does not occur. You can also upgrade you cluster to keep this issue from happening..

I tried that... it will fill in, but once you hit save, when it reloads the page, that field is showing "< None >" again.

you can do it individually via the find button next to the field that is grayed out.

When our Callmanager 5.1 system was originally installed, our vendor was not setting the Owner User ID field on the setup for our 7941G-GE phones. That's been causing some issues now, and we're trying to figure out a way to set each individual phone to have the Owner User ID of the main user. The problem is, it appears that after the initial setup of a device, you're unable to edit that field.
I can edit it by doing a Bulk Admin on each individual phone, but that's obviously going to be a hassle for 500+ phones. Does anyone know of an easier any to do this? Even if I can just directly set this field on the phone, without having to go through Bulk Admin, that would be better than nothing.
