Don't quite follow...are we talking about OS versions or Exchange
versions? There is no OS 2007 (but there is Exchange 2007..). Well,
I'll try to answer both.
For Exchange, Unity 5.0(1) is the first version to support Exchange
2007, you'd need to upgrade.
For the OS, Unity is not compatible with Server 2008, but it doesn't
care what OS your Exchange server runs on.
