Also keep in mind the system will come up with demo licenses immediately after install and lack of licensing doesn't prevent any subscriber installation. Assuming the licensing web page/team is speedy in providing you with the actual license having to wait until after the install shouldn't hold you up too much (compared to the time to install subs, configure phones, etc).

None the less the Admin Guide for CUCM 7 -> System Config -> Load License says:
Step 3 <blank.gif>Follow the system prompts. You must enter the MAC address of the Ethernet 0 NIC of the first node of the Cisco Unified Communications Manager cluster. You must enter a valid e-mail address as well as the number of nodes and device license units for which you want licenses.
So if you miss the prompt you could actually sit through the rest of the installation to retrieve the MAC after the fact.
