you want the official answer or what everyone does? 

I'm not saying we do it, but I believe we "tested" out OEM drives in Cisco badged servers and everything worked fine. During testing. ;)

So if I've got a Cisco-branded HP DL380G4 box, I can't do anything for a spare disk other than buy one from Cisco???

your IBM/HP rep can help you with that if you have an HP/IBM box. otherwise if you have a Cisco badged box you can buy a Cisco spare drive (at four times the cost, but it's blue)

How do you find out specs about the hard drives in order to make sure the RPM (etc) matches the one that you put in there after removing the mirrored drive?

No one will give you official support, but it's something that many people do. Many people suggest against it because of mismatched BIOS upgrades, but that's easily fixed with manufacturer utilities. (I think). 

My only suggestion is that if you have a spare drive, slap it in after you pull the second. Completing an installation with the drive arrays complete is a better option.

One of my managers would like to remove the second disk before the upgrade so that if we have any major issues (total system crash, etc), we can just replace the main disk with the mirrored disk that we removed and go back to status quo. Is this a good idea?
