that's what i would do.
just make sure you change your interface IP addresses (including loopback) and any routing information (RIP,EIGRP, etc).
also, update the interface information for your voice card slots if different.
the host name needs to be changed to in order for MGCP to work.
i think that's it.

Copy the config of the working one to notepad, edit the important
bits, paste into new router?
Can you be a bit more specific on exactly what you need help
configuring?
