OK.....so to put it in a nutshell:

If we are interested in keeping our soft key templates the way they are
(and add as few new features as possible), we will be able to do that.
Default values can be changed, correct?

I assume you are referring to softkey templates.  The only time new  
softkeys are introduced is via new features.  All new features should  
be documented in the release notes so if you see something there that  
talks about working via softkey then you can expect to either have to  
modify your softkey templates to allow users to see the new button OR  
if you are using the default softkey templates you may be seeing the  
new softkey appear.  I would like to think new softkeys being  
introduced would not automatically be added to non-default templates.

I'd advise you to look at the release notes for the firmware version
you will be moving to.  IIRC the last major overhaul to the way the
phones look was in 8.4 (which is probably why you are asking).
