Switching to a codec of sufficiently low bitrate to save you any space
is going to have a very noticeable impact on your recording quality
that will be especially apparent when heard between the studio
recorded G711 prompts from Unity :-) Disks are cheep these days, is it
not possible to upgrade the Exchange server? Also note that if you do
change the recording codec it won't do anything to all of the existing
messages stored on your Exchange server. Perhaps you'd be better
served by implementing a message aging policy to clear out messages
older then x days. Lastly, ensure that your nightly exchange tasks are
running. If they don't, you won't reclaim the disk space from deleted
mailboxes, etc.

If you still want to change your recording codec, take a look at this
doc. It give you the procedure as well as some of the pros and cons of
each codec (average size, whether codec is included in default windows
install or with vmo, etc):
