Yes, it will show the specific variant of g.711 in the phone's call stats.  CUCM will always prefer g.711a over g.11u and the only place you could control this would be the dial-peers on the h.323 gateway.

Call comes in H323 gateway 10.32.129.9 to CallManagerA 10.32.129.1 which passes it across InterCluster Trunk (non Gatekeeper) to another CallManagerB  which has 7961 phone.  CCM Traces show H.225 setup from 10.32.129.1 with Protocol = G.711 A-Law.
 
It shouldn’t be G.711 A-Law but instead G.711 U-Law.  Would the codec be set wrong on dial-peer on 10.32.129.9 ?
