As with most things there is a gap between what you can do and what you should do.  With voice servers and UC applications the latter group includes those things that Cisco will help you with should you try it and something goes wrong.
 
Only the DRS backup and restore process on cisco.com is supported by TAC.  Any other method you choose to try (hd cloning, ghost, pulling a drive from a raid array, etc) may work for you but has not been tested by anyone in Cisco and TAC won't help you with issues deriving from such a restore.

Have you checked the Disaster/Recovery Guides for these servers?  They have
all the information you need.  In my opinion, it is very straight forward
and works really well.
