I have more than one DVD with the server "UCS server conf utility 2.0 , CUCMC 8.6.1a installation DVD , UCS Utilities and drivers DVD "
 
to install VMware ; Is the software included on these DVD's or it comes in separate DVD ....  ?????

You'll need to install VMware on your UCS server first.  After that, you will need to configure VMware, set up a virtual machine, and then install CUCM within the virtual machine.
