It's only likely to be one or two calls a week with 5-6 participants 2 or 3 externals perhaps.
I can't seem to change the service parameter for the number of members, just reverts to 4 for bot meet-me and ad-hock.

So you can setup up to 16 parties using UCM, however I wouldn't do that. I would use Web Connect, or Meeting Place or Meeting Place express. Also depending how many conferencing bridges you need.
