Yes, I live on my iPad ... I have issues, I know.

I think the architecture guide you referenced is very good, especially the "Basic Video Concepts" section. 

For a learner just starting with video I might suggest something even more digestible and agnostic, just to get the feet wet with concepts like compression and encoding. It is a bit dated but still very applicable and teaches the "why" not just the "how". http://www.amazon.com/How-Video-Works-Analog-Definition/dp/0240809335

IMO, for someone well versed in all things Cisco, I think the architecture guide you have is spot on.
